This is how I made more sleeping room/length of bed

Pic 5979 - the seat back and shelf that used to be there
Pic 5980 - there was nothing behind it!
Pic 5983 - I added some supports
Pic 5984 - I installed a larger seat platform and removed the shelf
Pic 5987 - Longer bed! Put the shelf on the wall beside the bed

After seeing this I looked on line at the air stream version. I guess they bought another company that was building small trailers. The one I saw started at 30 grand. It did have big ole bed in it though. LOL

Got the Wolf Pup for a third of that price. Has a place to shower, poop and sleep for our trip up to WA. And it's light enough for my wife's Escape to pull.... only 2400 lbs.

Is there a bunk bed above the kitchen area?

Yup. Worthless space for us.

There's no such thing as worthless space in an RV/trailer. Lightweight items can be put into plastic bins and stored there. Just make sure to add some way to secure them so they don't go flying due to a sudden stop.
